Graeme and Philip Byrnes are brothers and 4th generation master fishermen from Wallis Lakes in NSW. They are recognised industry trailblazers with a philosophy of catching less fish in favour of quality. To them sustainability means ensuring fish for the future and the longevity of their livelihood. The quality of their fish comes from the exquisite attention and care for the harvest, resulting in ‘sweet’ tasting fish with an significantly longer shelf life
Sustainability & Quality measures:
“We get in the water to remove fish quickly from the nets, to reduce by-catch and to immediately ice slurry the harvest…Our nets employ larger mesh size than regulation size to minimise the capture of small fish. Careful hand removal of non-target species results in about 98% survival rate. At the final harvest stage nets are hand-drawn to minimise impacts to the seabed and sea grasses…We estimate our products stays fresh for 2 or 3 times longer than most wholesale products on the market. This is because our fish is chilled from the moment of capture. All species are treated with utmost respect to optimise taste and quality.”
The wonderful taste of their seafood comes from rendering the fish quickly & deftly unconscious. This minimises stress, stops lactic acid infusing and accumulating in the flesh AND thus ensures a sweet taste, delicate texture and freshness.
